Description :
The U.S. dairy sector had to face far-reaching structural changes during the last decades. This change can be characterized by a continuous increase of milk production in spite of a decreasing number of milk cows and a regional shift from the Northeast and Upper Midwest to the Southwest. A rapid increase of the population in the southwestern states resulted in a growing market for milk and milk products. Within a comparatively short time a new center of dairy farms and creameries was developed in California. - (MT)
