The paper argues that, within the broader pampa ranching region, the slaughtering plants to prepare salt-beef were distinctive in their patterns of ownership, investment and adoption of technology, with much less north-west European influence than at Buenos Aires and Montevideo. Political instabilities brought a shifting geography of salt-beef production, both in the Plata and in Rio Grande do Sul.
