Les AA. étudient l'histoire de la construction des minoteries au cours du XIXème siècle et des trente premières années du XXème siècle en Espagne. Ils montrent qu'il en subsiste peu de nos jours et en analysent la typologie, les techniques de construction et l'architecture. Ils proposent un échantillon de ce patrimoine agro-industriel présent dans le centre de l'Espagne qui peut servir de base à des projets de conservation, de réhabilitation et à des fins de logements.
