Between 1950 and 1984, Costa Rica increased its beef production more than three times, most of it exported to the USA. But that rise has been accompanied by a lowered beef intake among Costa Ricans : a switch from dairy to beef cattle with consequent shortages of milk and butter : a trend toward larger land holdings| and deforestation resulting in ecological degradation. - (DWG)
